Vegan Clean Eating

Hi all!  Hope everyone is getting to enjoy the long weekend :)  I've been really good with the clean eating and exercise this week (at last!).  The first week I didn't do so well but I've eased myself into it and I'm loving it now.  I did find it hard not drinking last night though, I always have a few drinks on a Friday night and I just didn't know what to with myself.  I had sparkling water with fresh lime juice instead and that tided me over.  I've also been doing a Jillian Michaels DVD every day after work (apart from last night), it's been far too cold and rainy for running if you ask me!

Here's some amazing tea I found in the week:


Butter mint tea!  It's so nice, mint with vanilla.  I might try it cold in a smoothie.  It helps to have interesting drinks around when vodka's off the menu! 

For breakfasts I've mostly been making overnight oats or a smoothie.  To make the overnight oats I've been putting oats, sultanas, cocoa nibs, coconut milk and frozen fruit (mango is my fave at the moment) in a bowl before bed.  I stir it around, cover it in foil and put it in the fridge.  At breakfast time it's ready to be eaten!  Fast food!  :)  I first heard about overnight oats from Angela at Oh She Glows.


I also had to buy a new blender this week.  I did have the Philips HR202/50 that my mum got me for Christmas (as per my request!) but the bottom stopped connecting to the jug.  I found this out while pouring milk into it...grrr. Luckilly mum had kept the receipt and I got to take it back to Argos and they exchanged it without any hassle.  I paid £5 extra and got the Tefal Blendforce.  So far so good!  It cuts through stuff really well, feels more solid and looks pretty (I think anyway!) 

The first smoothie is banana, frozen mango, oats and coco milk.  The second is frozen berries, oats, cocoa powder and and coco milk. I also bought some maca powder today and had that in a smoothie, I'll mention that in my next post more.


I've been having a lot of salads for lunch and using stir fry veg to bulk them out.  It's so cheap, quick and easy, I love it.  I used baked butternut squash in the first one along with the stir fry veg, tomatoes, cucumber, avocado, garlic oil  and balsamic vinegar.  It was SO GOOD!  Possibly the best salad I've ever had.  I put mixed beans in the salad on the right.  All variations on a theme really.


A couple of times in the last few weeks I've not had time to make lunch so had to stop at Sainsbury's on my way to work (it's handy as it's across the road).  I was really pleased to see a few new additions to their range.  I think I've had really similar stuff from Waitrose before.  This first one is the Moroccan Sweet Potato & Chickpea type thing.  It was really nice, the dressing makes it.  The first time I had I loved it but the second time around they seemed to have added loads of extra chilli's and it was a wee bit hot.  Not sure if I'll have it again now.


This second one is Mediterranean Vegetable and Orzo and is my fave I think.  I first had orzo last year and that was from Waitrose, it's pasta that looks like rice!  The sauce on this is delicious and the sun dried tomatoes are yummy :)


Here are a couple of dinners I've had.  Linda McCartney sausages with butternut squash and stir fry veg on the left.  The same sausages on the right (they're tasty....and on offer) with wholewheat noodles and homemade peanut sauce.  The peanut sauce was very nice!  I put a tablespoon of peanut butter in a pan with my skimmed coconut milk, some salt, pepper and a dash of agave.  I stirred it all in and as it boiled it the sauce thickened.  I've had it twice this week and I know it would make a good dipping sauce too.


Another dinner of scrambled curry tofu with veggies on rye bread.  I've been eating loads of fruit this week and below is a fruit salad with oranges, bananas, sultana's mixed berries and lime juice.  I've eaten quite a few oranges, I'm finding them great for that time after dinner and before bedtime when I usually get the munchies!

  1. I love orzo and so does the dog! Please can you give us your peanut sauce recipe, it sounds good. Looking forward to seeing your fave vegan products, I am still learning what is vegan and what is not. Great joy to discover that lots of doughnuts are vegan! Have a good weekend x

    1. Hehe, glad the dog enjoys his or her orzo too! The peanut sauce recipe is just above the picture of it. It's very nice, I just had a real craving for it the other day. Ooh you'll have to let me know which donuts are vegan too, I've not discovered any yet!! Have a good one too Fran :) x

  2. You are doing such a great job with the clean eating! How are you feeling? That fruit salad is gorgeous, I'm so jealous! The smoothies look really great too! We've been in a little bit of a cold snap lately so it's been too chilly for smoothies but those look delicious! The salads look great too and that I love the sound of that tea flavor!

    1. Thanks Sarah :) I feel great actually, the first few days I felt a bit like something was missing, like giving up caffeine, but now I feel great. And quite smug! Lol. It's been chilly here too, it's rubbish isn't it? I'm having smoothies and overnight oats anyway!! The tea is so nice, there are other flavours I want to try too :D x

  3. Butter mint tea sounds really interesting. I can't imagine what that's like. The smoothies are so pretty. I am only just getting back into the groove: the one I had today was less than perfect, but still good. They're amazingly easy and adaptable. The overnight oats are an old favorite of mine too. The cacao nibs add something really nice texturally to a mushy dish.
    Never seen raisins in a fruit salad before, but it sounds like it could be good.
    Nice work not boozing on a Friday... not sure I could pull that off, ha.

    1. The butter mint tea is lovely, mint and vanilla, perfect after dinner :) the raisins were just something else to throw in that were 'technically' a fruit lol. I'm using them to snack on a lot at the moment, I'm mixing them with cashews and getting my snack on! It's all about the texture definitely, cocoa nibs are wonderfully crunchy and go really well with the mushy oats. So does the defrosted mango, it's got such a great texture, somewhere between hard and soft, I'm not very good at describing it but I can't get enough of it at the moment :)

  4. Lana, all of these meals sound great! I am a big fan of tea, and this sounds so good. I'll have look about to see if we carry it. I'm also a fan of smoothies and all of Angela from Oh She Glows recipes! There is a fantastic smoothie with kale and blueberries that is so good.

    Would you believe I've never tried vegan sausage? Even in my vegetarian life and previous, I was never drawn to them - perhaps I'll be adventurous and try them!

    1. Thank you Ingrid :) I can't wait for the Oh She Glows cookbook to come out, I think it's next year :D I love blueberries, I'll have to give that a try. Never tried a vegan sausage?! Hehe, if you've never fancied one then that's fair enough. I really like the Linda McCartney ones, I'm not sure if you can get them where you are? I'd recommend those. I'm not quite sure on the definition of sausage though, I have a feeling it's just the shape! :) x

  5. Good for you on the clean eating!
    I discovered taht when i am out with friends and not drinking i feel lame and deprived if i sip a seltzer- so now i order a virgin bloody mary! If made well its all veggie juice anyhow and low cal/no sugar, feels more special somehow.
    The sweet potato chickpea lunch looks delicious!!

    1. They are good although not all of them are vegan. I take it they don't have them across the pond? I always thought they would go down well there!
