Hi all, apologies for no post last week. My mum came down to visit and we also had a lot on :) It was so nice to see my mum and I made her some nice dinners, at least she said they were nice! I made this the first night, it was just a nice easy LMC sausage, baked mushroom, med veg, coleslaw, avocado and crusty roll combo. Went down very nicely!
The next night Andy made us dinner! It was the fantastic vegan mousakka that he has made me before, it was perfect. We had it with steak cut chips and peas. Just look at the picture, it looks so cheesey!!
In other news our landlady has decided to sell our house. I'm kind of glad as I don't like this house anymore, I don't feel comfortable in it due to her bullying and accusatory nature. We've done nothing to deserve it and have paid all bills on time as we always have done. I can't wait to move actually, we should be moving in a few weeks to a house 5 mins round the corner. It has a much bigger garden and a much better feel to it. I hope we stay there for a good few years, I don't think I could face another move anytime soon!
Anyway, Sainsbury's were offering these milks for £1 each and I really liked both of them. I would buy them all the time if their regular price wasn't so dear. The hazlenut one tasted like a Kinder Bueno in milk form!! It was so good, especially with Coco Pops!! The unsweetened almond milk was nice too and made a great alternative to the coconut milk I usually use.
I've been enjoying tofu, mayo, pepper and hummus muffins/rolls. A great egg mayo replacement! This one in a muffin was just like an Egg McMuffin but better of course :)
As well as egg mayo type sandwiches I've also been LOVING red cabbage coleslaw or cucumber and Branston pickle sarnies. My new favourites!
Mum bought me a couple of the Reggae Reggae sauces as they're vegan and labelled as such too, which I find is quite rare from a big company. I've still got the Rasta Pasta to try but I made the Caribbean Curry and it was really nice. VERY hot though haha, Andy enjoyed it too. I made it with peppers, onion, sweet potato and served it with basmati rice.
As well all my other new favourites I've also been enjoying huge baked mushrooms. They're sooooo tasty! I bury them in frozen med veg usually and bake them for 20 mins. In the pic below Andy baked them in the oven with a little nutmeg, salt and pepper with frozen peppers on top. Then I added mashed sweet potato, more veg and gravy. Yum!
I might not post as regularly for the next few weeks or so as I get things organised for moving but I will certainly try. I am so looking forward to the summer when I can hopefully relax in my big garden without a care in the world! This week I am going to try and cut out sugar where I can and maybe get a run or two in. We managed one last week but that was only 2 miles. It's this pesky weather! I swear...

I didn't know that the reggae sauces were vegan so thank you for that. Your meals look really yummy. I am into large mushrooms at the moment. I put onions and vegusto cheese in them and grill til the cheese is bubbling, lovely! Good luck with the move xxx

DeleteOooh what great looking meals! That moussaka looks so amazing and creamy! Yum! That hazelnut milk, yum!!! I wish I could find something like that here, it sounds amazing!! I'll have to see if I can find anything similar in our local stores! If not, maybe I'll just have to try and make some!

Thank you :) I have passed on your moussaka comments to Andy and he is very pleased hehe. The hazelnut milk was sooo good, so creamy and tasty. I'm usually the one wishing we had more stuff from the US over here, not the other way round! I'm still trying to get a Wholefoods in Norfolk lol. I hope you find some Hazelnut milk soon! :)
DeleteGood luck with the move! Even if you are pleased with the change, it's a pretty big hassle but you are lucky that the new house is close! I've been trying to move too and it's really depressing.
ReplyDeleteI love the look of yr two sandwiches - the tofu/muffin looks like perfect morning comfort food and I love the idea of the red cabbage coleslaw! Crunchy sandwiches are the best.
Also reaaally really wishing I could find some hazelnut milk! maybe I will look, or try to find my own. Fun post.

Yes moving is a huuuge hassle, so glad it's only 5 mins round the corner this time rather than 100 miles each way! :) Good look trying to move again, it is hard at the moment over here too. I think we got really lucky with our new house, I still can't quite believe it really, I'm waiting for something to go wrong!! :-/ The tofu muffin is perfect comfort food, I could eat them all day. Try and find hazlenut milk if you can, I definitely recommend it! Thanks as always for your lovely comments :) x
