Mondays, Meals & Muffins

Hi all.  I hope everyone is well and keeping warm!!  I'm feeling a bit better, definitely have my appetite back but I still need to watch what I'm eating.  I've managed to kick the diet cokes and drink more water.  I need to get back into taking my wheat grass though and get back into the swing of exercising.

I'm really thinking about joining Weight Watchers to have some sort of structure added to my diet.  I'm not sure though and want to make sure before I spend my money on it!  In the meantime here are some bits and pieces I have eaten/made/tried recently:

I've seen this 'All Natural Peanut Butter & Co' stuff mentioned in loads of US and Canadian blogs but I'd never really seen it here before until I came across it Sainsbury's.  I have to say I was really disappointed!  It needs a good stir and even then the consistency is really runny and not very good for spreading.  It also tasted a bit bland. I must say I am probably used to the more sugary peanut butters that the supermarkets make for a lot less money but I have also had the Meridian Peanut Butter which consists of just peanuts and nothing else; that was much, much better.  So I think I will give this a miss in future, unless I come across the one with white chocolate in it!!  I'd LOVE to try that, two of my favourite things in one jar, that's got to be good!


I had a hankering for raspberry muffins one night so I made these!!  They were really good and I was so pleased as my previous vegan muffin/cupcake exploits had not been so successful.  I followed this recipe: http://www.rte.ie/lifestyle/food/recipes/2012/0911/3276-vegan-raspberry-muffins/  

I omitted the cider vinegar and orange zest as I had none and I also used coconut oil instead of sunflower oil as it's healthier and I think it tastes nicer.  Oh, and I used half wholemeal flour and half rice flour and frozen mixed berries!!


They turned out so well and were really yummy.  I was extra glad I had one on hand when someone brought some non vegan brownies into work, I got to join in with cakey goodness :)  The berries went all gooey inside, they were yummy and I will definitely be making them again.  I think I will make sure I have orange zest next time though.

I bought a Schwarz herb/spice packet mix for Bombay potatoes.  I wasn't so keen but Andy really liked them, they were soooo hot!!  Much spicer than we expected.  I've been using a lot of the Schwarz herb mixes recently, they're great and so easy.  I always use the Chilli Con Carne in, guess what, my chilli and the stew ones are really good for bunging in the oven with a load of veg.  Nice and easy :)

 I also used a packet mix in this lasagne I made with my favourite bechamel sauce.  It was delicious and we served it with Sainsbury's Basics garlic bread.  I've discovered most of the supermarkets basics range garlic breads are vegan, very handy and pretty tasty.

    1. Thank you Fran :) Banana soft serve is one of my favourite discoveries!! It's frozen bananas whizzed up in the blender, I use a little coconut milk or almond milk to get it moving as it can be very stiff. I usually have to stop the blender, scrape it round, blend and repeat until it's all done. When it's done it tastes just like ice cream!! It's amazing!! I liked adding frozen strawberries in the summer too, the more milk you add the more milkshake-like it becomes. And the best bit is it's pretty much just fruit! :D I get rather over excited about this hehe. x

  2. OMG your bunnies!!! They are so cute!! Such sweet faces :) Your meals look gorgeous. I really love the frozen smoothie and banana soft serve with fruit. They look light and delicious. The muffins are beautiful! Great job with the run and with kicking the diet cokes :)

    1. Aw thank you, the bunnies are very cute but they're also very naughty! Hehe. I LOVE softserve, I can't wait until the Summer to start making loads more :) Thank you for your lovely comments as always, I was very pleased with my run after such a long break. Looking forward to getting stuck back into it!

  3. Yum, the muffins sound great. I haven't baked in a long time; I really ought to. The snow is lovely too, even if it's hindering yr runs. How did you eat the frozen smoothie? Just let it melt a little and eat it like ice cream?

    1. Thank you :) Ahh the frozen smoothie, well picked up on. I was too impatient for it to melt, they seem to take ages! I kept jabbing at it with my spoon and ended up with it in my lap a few times! still, it was tasty :) x

    1. Thank you :) The lasagne is really nice and I would definitely recommend it, it's all about the bechamel sauce! I still haven't got round to making more muffins, another thing on my to-do list ;)
